Hassle free Potato Roast

Can you imagine vividly in your mind, the last time you had piping hot Indian herb soup or rasam with potato roast. Such a comfort it brings to the mind and palate on how humble food could also taste great without sophisticated or peculiar ingredients in a list. I had this simple food last week and I wanted to share with all readers today after a week of lying there in the draft box. This Hassle Free Potato Roast is also a great complement with Lemon Rice or Curd Rice.

Hassle Free Potato Roast

Ingredients :

Washed and unpeeled medium size potatoes : 3
Chilli Powder : 1 1/2 tsp
Coriander powder : 1/2 tbsp
Crushed garlic : 1clove
Turmeric powder : 1/8 tsp
Salt : as needed
Oil : 3 - 4 tbsp

To Temper :

Fennel seeds : 1tsp
Curry leaves : 2 sprigs


Method :

1. In a pan, add oil. Once the oil is hot enough, temper the fennel seeds, curry leaves and crushed garlic pod till it becomes light brown colour.

2. Cut the potatoes into big wedges as shown in the picture below.




3. Add potato wedges, chilli powder, coriander, turmeric powder and salt. Keep stirring under low flame without water. The potatoes will cook in the oil only. 



4. Eventually, the potato will change colour to deep brown and its a cue that roasting process is done and don't forget to check whether potatoes have cooked well.
